NEW YEARS GOOD LUCK CASSEROLE

 1 HEAD CABBAGE (CHOPPED SMALL)

1.5 OR 2 LBS SMOKED OR BREAKFAST SAUSAGE COOKED,DRAINED THEN SLICED/DICED

1.5/ OR 2 LBS LEAN GROUND MEAT COOKED UNDRAINED

1 BUNCH GREEN ONIONS (CHOPPED) INCLUDING THE GREEN PART

2 LARGE ONIONS (CHOPPED)

1 CAN STANDARD TOMATO SAUCE

2 CANS BLACKEYED PEAS, UNDRAINED 

1 CUP WATER

1 CUP BROWN RICE

LAYER RICE, WATER, CABBAGE, SAUSAGE, GROUND MEAT, TOMATO SAUCE, ONIONS & PEAS IN THIS SEQUENCE,  IN A DUTCH OVEN OR A TIGHTLY FOIL COVERED 4″ DEEP PAN.

BAKE AT 400F FOR 90 MINUTES. ALL OVENS ARE NOT THE SAME SO THEN;

REMOVE FROM OVEN. OPEN CAREFULLY AND STIR ALL TO BRING THE BOTTOM TO THE TOP. SEE IF THE CABBAGE IS TENDER AND IF NOT REPLACE THE LID OR RE-SEAL THE FOIL AND BAKE ANOTHER 30 MINUTES. 

REPLACE LID OR FOIL ON TIGHTLY AND LET SIT FOR 15 MINUTES.

THIS WILL FEED 8-10 HUNGRY PEOPLE, EASY TO ADJUST FOR LARGER GROUPS
